I’ve had a fairly good season for zucchini. I found another really big squash in the garden today so I decided to stuff this one for dinner.
I went to the grocery store and bought some steamed shrimp. The Old Bay seasoning imparts an extra layer of flavor in this dish.
I cut the zucchini lengthwise and scooped out the seeds to make ‘boats’, then basted them with olive oil (top and bottom).
Put them in the oven at 350° for about 15 minutes and prepare the other ingredients.
Saute onions in some olive oil and add salt and pepper.
Once the onion is cooked add it to the steamed shrimp. Then add one beaten egg and some breadcrumbs.
Take the zucchini from the oven and add the shrimp mixture to the hollowed out cavity. Crumble some feta cheese on top and return it to the oven for 15 minutes.
I could see using crab or chicken in this recipe too. Ingredient list below:
