Turkey Soup

After a few ridiculously busy weeks I finally had time to get back in my kitchen today.

I had cooked a small turkey a couple weeks ago and froze the bones with about half the bird so I could can some soup.

Today I cooked the bones down in a big pot of water to make broth. While it was cooking I prepped the rest of the ingredients.

Into my clean jars went 1/2 cup frozen corn, 1/4 cup chopped celery, and 1/2 cup sliced carrots. Nothing cooked which makes this recipe so easy.



Once I had a good broth, I removed the turkey and bones and let it cool. Then to the jars I added about a cup of shredded turkey then a dash of pepper and 1/4 tsp salt.


I poured broth into the jars leaving 1 inch headspace. Removed air bubbles and wiped down the rims. Then placed caps and rings on and processed at 10 lbs pressure for 90 minutes.

Lost one jar to a cracked bottom but came out with 6 quarts of turkey soup!
