Week 4 of the 12 week fitness challenge I signed up for is coming to a close. I’ve been spot on 95% of the time tracking every bite of food in My Fitness Pal.
Keeping up with a high protein lifestyle is challenging sometimes but it has given me the opportunity to find new recipes.
I love bell peppers and have found a few different ways to stuff them minus the rice.
This week’s winning dinner was Philly cheese steak stuffed peppers.
These were easy and absolutely delicious. I really didn’t even miss the sub roll!
And it’s always a bonus when my youngest, who is my picky eater, falls in love with them.

I did pre-bake the unstuffed peppers at 350° for about 20 minutes because I wanted them a little softer.
We’re definitely going to have these again!
