7 weeks into a fitness challenge and I’ve found some amazing recipes. I need protein packed dinner options that the family will eat too.
This week I found another recipe using bell peppers that didn’t disappoint. Bell pepper chicken nachos!
I used double the shredded chicken and salsa that the recipe called for and used six large peppers. It was a winner, my youngest liked it, and it’s super filling.
As for my progress in the challenge, I’m really pleased. I’m not losing pounds at this point but I’ve lost a total of 6 inches!
I’m not hungry. I’m eating great food and am in the gym 6 days a week. I’m feeling better now than when I was younger and that’s a good thing!

Mine weren’t nearly as I pretty as theirs, but I’m not about pretty as much as I am about good food that’s healthful and filling.
