Baking myself happy…

Another snow day here on the Mason Dixon Line. I am so over this winter I could scream. The snow we got today – every bit of 10 inches – would have been nice in January. Maybe even early February, but not this close to Spring.

This is the time of year when we’re getting ready to plow and fertilize the soil. Now it’s buried under all this dreaded white stuff. I’m admittedly grumpy!

Nothing makes me feel better than baking so today I decided to use up some over ripe bananas. I found a recipe on Pinterest that I could tweak and my daughter and I made it together.

I do love spending time in the kitchen with all of my children. It’s special times that I hope will give them memories long into their adult years.


The house smelled heavenly and I definitely felt better baking something delicious!

You can find the recipe here I omitted the walnuts because I didn’t have any on hand. Instead I added some Reese’s Peanut Butter chips and topped the bread with some cinnamon sugar before baking it.

I am factoring in some calories tonight since I’m still in the middle of a fitness challenge – I just can’t pass this up!
