June has certainly given us our share of rain. I’m grateful for it with the exception of the weeds being completely out of control.
Picked the first of the summer squash and zucchini this past week and made one of my favorite dinners with the zucchini.
I prefer zucchini young and tender but when those big ones hide from you, they’re great for stuffing.
This one was stuffed with steamed shrimp and feta. Low carb and ridiculously delicious!
