It’s been a while…

Sometimes life just gets in the way, lol. I have not been able to get much canning done lately. We’ve been so busy with work, the kids, and their various activities, that I haven’t had much time in the kitchen.

We had a wonderful Thanksgiving here with family. It is by far my favorite holiday and I love to host it.

This year I looked for easy recipes for desserts to have in addition to my home made apple pie. I needed something quick yet delicious.

I found a recipe on Pinterest for easy peanut butter microwave fudge.

This was beyond easy to make and tasted as good as other fudge recipes,  without all the ingredients and fuss.

All it takes is a 16.3 oz jar of peanut butter and a container of vanilla frosting. Yep. That’s it.

Put the peanut butter and frosting in a microwave safe bowl. Do not mix it. Microwave for one minute, then stir to mix it well. Spread in a 9″ square, foil lined baking pan and refrigerate until firm.

How easy is that?!

Cheating?  Maybe, but give it a try and I think you’ll find it’s rich, smooth and absolutely delicious!
