I’m struggling with the reaction I’ve been having when I eat anything that has enriched flour in it. I’ve been researching recipes without it and am frustrated at the list of crazy ingredients or the high carb content.
This holiday I just wanted cookies. Not with the high carb content, obsurd ingredients or the like. Hello almond biscotti!
It can be made gluten free by using gluten free baking powder.
Leaving them to cool in the oven with the door propped open after baking the slices helps them to get nice and crisp.
Here’s the recipe I used. The only substitution I made was using Truvia for baking.
I’m excited to have one with my coffee in the morning.
