I was looking for something different to make for New Year’s Eve. We spent the evening with friends and enjoyed a wonderful dinner and great company.
I found a recipe for maple bourbon walnut mini bundt cakes and since our friend is a fan of bourbon I thought I’d give them a try.
My mini cake pans were larger than those used in the recipe so I only got six cakes instead of twelve. The batter was thin and reminded me of the consistency of a hot milk cake batter. We kept these for the adults and not the kids because of the type of alcohol used in the recipe.
Since I continue to have an allergic reaction to foods containing white flour, I didn’t get to enjoy more than just a bite, but what I did have was really rich and delicious.
I would definitely make these again. The flavor options are kind of endless and dependant on the type of bourbon used.
Happy New Year and cheers to a year full of good food and great friends!
