Irish Soda Bread

Took advantage of our snow day today to make an early St. Patty’s day dinner. The kids immediately asked if I would make some Irish soda bread.

No better time to bake than on a cold, windy and snowy day!

My youngest daughter helped me and we decided on a recipe without the currants in it. I didn’t have buttermilk on hand so I showed her how to make a substitute for it using vinegar in the milk.

The loaf turned out really nice.

It was the perfect accompaniment to our corned beef, cabbage and potatoes!

  3. I used raisins in mine, a mixture of regular and golden πŸ™‚ I like that they add a little sweetness to the bread since I usually eat it for breakfast slathered in butter. Some corned beef and cabbage would have been yummy too though!

  4. So funny! I used the snow day to make an Irish soda bread too, and I also had to DIY the buttermilk (but I used lemon juice instead of vinegar). Still have to manage to get the blog post about it up though… Yours looks great! πŸ˜€
