I’ve been on a keto diet for the past 4 weeks. For the most part I don’t crave many foods or sweets and enjoy eating this way.
Tonight we went to dinner in Little Italy to celebrate (better late than never) our son’s birthday. Eating keto at an Italian restaurant was easier than I thought it would be.
After dinner we walked to Vaccaro’s bakery. That’s when I started to have an issue with keto. The cookies, eclairs, canolli, and gelato all were calling my name!
I can’t eat gluten so that kept me from getting into too much trouble. The gelato was hard to resist.
When I got home I just needed some kind of dessert!
I found a peanut butter mug cake recipe on Pinterest that only had 3 ingredients but it wasn’t keto. So I decided to make my own.
Now….it’s not like the texture of traditional cakes but when you’re not eating any sweets it’ll do.
2 tbsp. Simply Nature creamy peanut butter, 1/2 tsp. Truvia baking blend, one large egg.
Wisk the ingredients together and put in an oversized mug and microwave for 1 minute. Let stand several minutes before eating.
It’s not sweet but hit the spot for me!
