Snow days and comfort foods go together. I’m pretty disciplined in my “diet” and shy away from all the keto recipes I see opting for more whole foods in their natural state.
But today I just wanted a comfort food. I decided on crepes….keto style.
The recipe couldn’t have been any easier.
2 eggs, 2 oz. softened full fat cream cheese and one packet Truvia
I blended them in my ninja and the batter was ready in seconds!
They were tasty and hit the spot. Note that they do tear easily but it wasn’t too bad.
I spread a thin layer of natural peanut butter on mine.
It made 4 crepes…one was eaten right away and didn’t make it to the plate.
